I play on a 27 inch iMac at 2560 x 1440. (Windowed mode) There are several points to make. I assume you are using the Mac Client, not trying to play on the PC Client in BootCamp.
(They do behave differently.) I do not know what you mean by 'settings' -- the game resolution is controlled in-game via the Options/Graphics panel. There is no 'settings.' The Mac Client works best at the default settings.
Use the Launcher to reset to them. Use the Options pull-down, Repair tab. Don't try to use the 'Detect Optimal Settings' button in Options when playing with the Mac Client -- it doesn't work. (Never has!) Many of the graphics settings are inter locked - some settings block others. (Off Hand I don't recall which ones.) LOTRO does not have fonts to support higher resolutions than 2650x1440 -- i.e. The Retina, 4K and 5K displays.
The end result is that you have extremely tiny lettering in quest boxes and the like. Yes, you can change the size of the UI -- but not the fonts.
