I have just rebuilt my system with a clean install of Windows 10 and Office 365 (2016). I have several email accounts defined in Outlook, including Gmail (Imap), MSN, Outlook.com and a roadrunner account. Before I did the reinstall, mail would open to my Gmail (Imap) inbox. Now it opens to the Outlook.com inbox. I believe the determining factor for which inbox is the default is determined by which account is the default in the data tab of Outlook's Account Settings. When I try to set the default to Gmail, it says you cannot set the default to a non-standard OST or PST file. Yet, the Gmail data file seems to be an OST file (.

In short, because gmail's use of the term 'less-secure' is misleading, and Microsoft would prefer that you use Office-365 (or outlook-dot-com) as your email provider. With respect to 'less-secure', Google is referring to the mechanism by which the app authenticates itself to gain access to your gmail account. Outlook-2016 does this by sending your username and password over an encrypted IMAP connection. There is nothing inherently insecure about that approach. It is used by every other email provider. Google would prefer that apps use a different mechanism, called OAuth. An overly simplified description of that mechanism is that the app uses a token to authenticate itself to gmail.
Instead of sending your user name and password over the encrypted communication channel, it sends the token over the encrypted connection. When using properly functioning software from a reputable company, there is essentially no difference between the two approaches. The mechanism used by Outlook is not any more vulnerable to a malicious attack than is Google's preferred mechanism. There are different issues that arise when you start using random applications from arbitrary companies that might be malicious. With the OAuth method, you grant that application access to your email, and that is it. With Outlook's method, that arbitrary app gains access to your Google username and password. With that access, it can potentially damage your Google account beyond just your email.
On the surface, it seems to make sense that Google would do that. The implementation, however, exposes the entire thing to be a little silly. Think about your experience.

You only learned about this issue AFTER you had provided Outlook with your gmail user & password. A malicious piece of software would have already transmitted that information back to its masters, who would then make use of it to do nefarious things. Anyway, if you trust Microsoft and you're careful about the other apps that you provide your credentials to, then you have nothing to worry about when you enable, so-called 'less-secure' apps. The other part to this answer speaks towards Microsoft's motivations. Of course, they could assign a single engineer to add the XOAUTH2 authentication mechanism to Outlook, and it would take that engineer less than a day to implement that feature. The question is, Why would they want to do that?
